Add mustard seeds and let them splutter.Add asafoetida, dry red chili, and curry leaves. Fry for a few seconds until fragrant.Sauté the veggies

Add sliced mushrooms and cook until they release their water and become soft.Make the upma
Add semolina to the pan and roast for a minute until it turns slightly golden.
Pour in water and salt. Stir continuously to prevent lumps.Bring the mixture to a boil, then reduce heat to low and cover.Cook for 5-7 minutes or until the upma is cooked through and the water is absorbed.Garnish with chopped coriander leaves.Serve hot with coconut chutney or your favorite pickle.Tips: For a richer flavor, you can add a tablespoon of grated coconut while roasting the semolina.
