Poha (flattened rice)
Mushrooms, choppedOnion, choppedGreen chilies, chopped (adjust to your spice preference)Mustard seedsCumin seedsTurmeric powderRed chili powderCoriander powderLemon juiceChopped coriander leavesSalt to tasteOil Instructions
Preparation:
1. Wash the poha under running water and drain excess water.
2. Chop the mushrooms, onion, and green chilies.
Cooking:
1. Heat oil in a pan over medium heat.
2. Add mustard seeds and let them splutter.
3. Add cumin seeds and let them crackle.
4. Add chopped onions and saute until translucent.
5. Add chopped green chilies and saute for a few seconds.
6. Add chopped mushrooms and cook until tender.
7. Add turmeric powder, red chili powder, and coriander powder. Saute for a few seconds.
8. Add the drained poha to the pan and mix well.
9. Cover and cook for 2-3 minutes on low heat, or until the poha is cooked through and slightly softened.
10. Squeeze fresh lemon juice over the poha.
11. Garnish with chopped coriander leaves and salt to taste.
Serving Suggestion:
Serve Mushroom Poha hot with a side of yogurt or chutney. It’s a perfect breakfast, lunch, or light dinner option.
Tips:
