Mushroom Pani Puri: A Fun Twist on a Classic

1. Give those mushrooms a good wash and slice ’em up. We’re talking small dice here.
2. Heat up a pan with a little oil. Throw in some cumin seeds to sizzle, then add the chopped onion, green chilies, ginger, and garlic. Let those flavors dance together until the onions turn golden brown.
3. Toss in the mushrooms, and sprinkle on the coriander powder, garam masala, turmeric, red chili powder, and a pinch of salt. Stir-fry until the mushrooms are cooked through and the water has evaporated.
4. Let the mixture cool completely.
Make the Pani
1. Blend together mint leaves, coriander leaves, green chilies, ginger, cumin powder, chaat masala, salt, and a squeeze of lemon juice with some water.
2. Strain the mixture to get rid of any lumps. Adjust the taste with more salt, lemon, or chilies if needed.
Assemble and Serve
1. Take a pani puri shell and gently break the top to create a small opening.
2. Stuff the shell with the mushroom mixture.
3. Top it off with a dollop of yogurt, a sprinkle of chaat masala, and some chopped mint and coriander.
4. Pour the pani into the puri just before serving.
Tips and Tricks
For extra crunch, add some sev (fried gram flour noodles) on top.If you can’t find readymade pani puri shells, you can make your own.
