1 cup basmati rice

Get Started:1. Prep the rice: Rinse the basmati rice thoroughly until the water runs clear. Soak it in water for about 30 minutes. Drain the rice completely.
2. Cook the mushrooms: While the rice is soaking, heat some oil in a pan. Add the sliced mushrooms and cook until they release their water and turn golden brown. Set aside.
Make the Pulao:1. Sauté the spices: Heat ghee or oil in a large pot or pressure cooker. Add cumin seeds, cardamom pods, bay leaf, and cinnamon stick. Let them sizzle for a few seconds until fragrant.
2. Fry the onions: Add the chopped onions and sauté until they turn golden brown.
3. Add the flavors: Stir in the minced garlic and grated ginger. Cook for a minute until the raw smell disappears.
4. Combine ingredients: Add the cooked mushrooms, green chilies, and soaked rice to the pot. Mix well.
5. Season and cook: Pour in the water and salt to taste. Bring to a boil, then reduce heat and cover.
6. Perfect the rice: If using a pressure cooker, cook for 2-3 whistles. For a regular pot, cook for about 18-20 minutes or until the rice is tender and the water is absorbed.
7. Garnish and serve: Fluff the rice with a fork, garnish with fresh coriander leaves, and serve hot.
Tips: For extra flavor, you can add a pinch of saffron soaked in warm milk to the rice.
