Mushroom Shakshuka: A Hearty and Flavorful Breakfast
What is Shakshuka?
Shakshuka is a North African dish that’s basically eggs baked in a spicy tomato sauce. It’s a super satisfying meal that’s perfect for breakfast, brunch, or even a light dinner. This version adds mushrooms for an extra dose of umami flavor.
Ingredients:
1 large onion, chopped2 cloves garlic, minced1 tablespoon olive oil1 pound mixed mushrooms, sliced1 teaspoon ground cumin1/2 teaspoon paprika1/4 teaspoon cayenne pepper (optional)1 (28 ounce) can crushed tomatoesSalt and pepper to taste4 large eggs Instructions:
Get cooking!1. Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Stir in the garlic, cumin, paprika, and cayenne pepper (if using). Cook for 30 seconds more.
3. Add the mushrooms to the pan and cook until golden brown, about 7 minutes.
4. Pour in the crushed tomatoes and season with salt and pepper. Bring to a simmer and let cook for 10 minutes, or until the sauce has thickened.
5. Create four wells in the sauce and carefully crack one egg into each well.
6. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
7. Serve immediately with crusty bread.
Tips:
