Ingredients 1 large onion, chopped
4 cloves garlic, minced1 inch ginger, grated1 tablespoon olive oil1 pound mixed mushrooms, sliced (cremini, shiitake, and portobello work great)1 teaspoon smoked paprika1/2 teaspoon ground cumin1/4 teaspoon cayenne pepper1 can (14.5 ounces) crushed tomatoes1 cup vegetable broth1/2 cup peanut butter1 tablespoon lime juiceSalt and pepper to tasteCooked rice, for servingInstructions Getting Started
1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Stir in the garlic and ginger, cook for another minute until fragrant.
Building the Flavor
1. Add the sliced mushrooms to the pot and cook until browned, about 10 minutes.
2. Sprinkle in the smoked paprika, cumin, and cayenne pepper. Cook for 30 seconds, stirring constantly.
3. Pour in the crushed tomatoes and vegetable broth. Bring to a simmer and let it cook for 15 minutes.
Creating the Peanut Sauce
1. In a small bowl, whisk together the peanut butter and lime juice until smooth.
2. Gradually add some of the hot stew to the peanut butter mixture, whisking constantly, until you have a smooth sauce.
3. Pour the peanut sauce into the pot and stir to combine.
4. Season with salt and pepper to taste.
5. Let the stew simmer for another 10 minutes, or until thickened to your desired consistency.
