What is Minestrone?
Minestrone is basically a hearty Italian soup packed with veggies, pasta, and sometimes beans. It’s like a warm hug in a bowl. This version is a mushroom lover’s dream!
Ingredients:
Olive oilOnion, choppedCarrots, choppedCelery, choppedGarlic, mincedDried thymeDried oreganoVegetable brothDried pasta (like ditalini or small shells)Mixed mushrooms (cremini, shiitake, oyster, etc.) slicedCannellini beans, drained and rinsedSpinach, roughly choppedParmesan cheese, for serving Instructions:
1. Sauté the veggies: Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery and cook until softened, about 5 minutes. Toss in garlic, thyme, and oregano and cook for another minute.
2. Add the broth and pasta: Pour in vegetable broth and bring to a boil. Stir in pasta and cook according to package directions.
3. Mushroom magic: While the pasta cooks, add sliced mushrooms to the pot. Let them cook until tender.
4. Bean it: Stir in drained cannellini beans.
5. Green it up: Add spinach and cook until wilted.
6. Taste and adjust: Season with salt and pepper to taste.
7. Serve it up: Ladle soup into bowls and top with Parmesan cheese.
Tips:
