Cream of Mushroom Soup

Ingredients: 2 tablespoons butter
1 onion, chopped2 cloves garlic, minced1 pound mushrooms, sliced4 cups chicken broth1 cup heavy cream1/2 cup dry white wine (optional)Salt and pepper to tasteInstructions:Melt the butter in a large pot over medium heat.
Sauté the onion and garlic until softened, about 5 minutes.
Add the mushrooms and cook until browned, about 10 minutes.
Pour in the chicken broth and bring to a boil.
Reduce heat and simmer for 15 minutes, or until the mushrooms are tender.
Use an immersion blender to puree the soup until smooth, or transfer the soup to a blender and puree in batches.
Return the soup to the pot and stir in the heavy cream and white wine (if using).
Season with salt and pepper to taste.
Serve hot with crusty bread.
Tips: For a richer flavor, use a combination of white and cremini mushrooms.
