Who says satay is just for meat lovers? This plant-based version is packed with flavor and super satisfying. It’s perfect for a weeknight dinner or a casual gathering. Ingredients:
For the mushrooms:
Oyster mushrooms (or your favorite kind)Soy sauceSweet soy sauce (or kecap manis)Ground corianderToasted sesame oilFor the peanut sauce:Creamy peanut butterCoconut milkChili (fresh or dried)Lime juiceGinger Instructions:
Get your skewers ready:1. Soak wooden skewers in warm water for about 30 minutes. This prevents them from burning.
Prep the mushrooms:1. Tear the oyster mushrooms into even strips.
2. Thread the mushroom strips onto the skewers.
Make the satay marinade:1. In a bowl, combine soy sauce, sweet soy sauce, ground coriander, and toasted sesame oil.
2. Brush the marinade generously over the mushroom skewers.
Grill or pan-fry:1. Grill the skewers until golden brown and cooked through.
2. If you don’t have a grill, you can pan-fry them in a little oil.
Whip up the peanut sauce:1. In a food processor or blender, combine peanut butter, coconut milk, chili, lime juice, and ginger.
2. Blend until smooth and creamy. Adjust the consistency with water if needed.
Serve it up:1. Serve the mushroom skewers hot with the peanut sauce.
Tips: For extra flavor, marinate the mushrooms for at least 30 minutes (or overnight, if you have time).
