Mushroom Stew: A Cozy Comfort Food

1 onion, chopped3 cloves garlic, minced1 pound mixed mushrooms (cremini, shiitake, button, etc.), sliced4 cups vegetable broth1 cup dry red wine1 tablespoon dried thyme1 bay leaf1 teaspoon dried rosemarySalt and pepper to tasteFresh parsley, for garnish (optional)InstructionsStep 1: Sauté the Aromatics Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.Stir in the minced garlic and cook for 30 seconds more.Step 2: Add the Mushrooms Add the sliced mushrooms to the pot and cook until browned and the liquid has evaporated, about 10 minutes.Step 3: Create the Stew Base Pour in the vegetable broth, red wine, dried thyme, bay leaf, and rosemary.
Season with salt and pepper to taste.Bring to a boil, then reduce heat to low and simmer for at least 30 minutes, or until the mushrooms are tender and the flavors have melded together.Step 4: Serve Remove the bay leaf.
Ladle the mushroom stew into bowls. Garnish with fresh parsley, if desired.Tips For a thicker stew, you can add a tablespoon of cornstarch mixed with a little water to the stew and simmer for a few minutes.
