Mushroom Bibimbap: A Meat-Free Feast
What is Bibimbap?
Bibimbap is a Korean dish that’s basically a big bowl of yummy goodness. It’s usually got rice, veggies, meat, and a spicy sauce. But don’t worry if you’re vegetarian or vegan, we’re making a meat-free version!
Ingredients You’ll Need:
For the Bibimbap:White riceMixed mushrooms (shiitake, oyster, enoki)CarrotsSpinachBean sproutsSesame oilSoy sauceGarlicGingerGochujang (Korean chili paste)SugarSesame seedsFor Serving:A raw egg (optional)Kimchi Let’s Cook!
1. Cook the rice: Follow the package instructions for your rice.
2. Prep the veggies: Slice your mushrooms, carrots, spinach, and bean sprouts.
3. Sauté the mushrooms: Heat some sesame oil in a pan, add sliced garlic and ginger, and then toss in the mushrooms. Cook until tender.
4. Stir-fry the veggies: In the same pan, quickly stir-fry the carrots, spinach, and bean sprouts. Season with soy sauce.
5. Make the gochujang sauce: Mix gochujang, a little sugar, and a splash of water to taste.
6. Assemble your bibimbap: In a bowl, layer the rice, sautéed veggies, and mushrooms. Drizzle with gochujang sauce.
7. Optional toppings: Crack a raw egg on top (if you like), and add some kimchi for extra flavor.
