Ingredients: 1 pound mixed mushrooms (cremini, shiitake, oyster, or your fave)
4 large eggs1 cup milk1/2 cup all-purpose flour1/4 cup grated Gruyère cheese1/4 teaspoon saltPinch of nutmegOptional: Fresh thyme leavesInstructions:1. Preheat your oven to 375°F (190°C).
2. Prep those mushrooms: Slice up your mushrooms. You can sauté them a bit if you like, but it’s not necessary.
3. Whisk it up: In a large bowl, whisk together the eggs, milk, flour, cheese, salt, and nutmeg until smooth.
4. Combine: Pour the batter over the mushrooms in a baking dish. If you’re feeling fancy, scatter some fresh thyme leaves on top.
5. Bake it: Pop it in the oven for about 30-35 minutes, or until the clafoutis is puffed up and golden brown.
6. Let it cool: Let it cool for a few minutes before serving.
