Mushroom Curry: A Cozy Comfort Food

Ingredients: 1 tablespoon olive oil
1 onion, chopped2 cloves garlic, minced1-inch piece of ginger, grated1 teaspoon cumin seeds1 teaspoon coriander seeds1/2 teaspoon turmeric powder1/2 teaspoon chili powder (adjust to taste)1/2 teaspoon garam masala1 pound mixed mushrooms, sliced1 can (15 ounces) coconut milk1 cup vegetable brothSalt and pepper to tasteFresh cilantro, for garnishInstructions:Heat the oil in a large skillet or pot over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another minute.
Add the cumin seeds, coriander seeds, turmeric powder, chili powder, and garam masala to the pan. Stir for 30 seconds until fragrant.
Add the sliced mushrooms to the pan and cook until browned, about 5-7 minutes.
Pour in the coconut milk and vegetable broth. Bring to a simmer and reduce heat to low. Let the curry simmer for 15-20 minutes, or until the mushrooms are tender.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
Tips: For a richer flavor, use full-fat coconut milk.
