2 cloves garlic, minced1 inch piece of ginger, minced3 cups vegetable broth1/2 cup dried shiitake mushrooms, rehydrated and sliced1 cup mixed mushrooms (cremini, oyster, or your favorite)1/4 cup bamboo shoots, drained and sliced1/4 cup corn kernels1/4 cup tofu, cubed1 egg, beaten1 tablespoon soy sauce1 tablespoon rice vinegar1 teaspoon sugar1/2 teaspoon white pepperSalt to taste Instructions:
1. Prep your ingredients: While you wait for the shiitake mushrooms to rehydrate, mince your garlic and ginger. Slice the other mushrooms, bamboo shoots, and tofu.
2. Make the base: Heat the vegetable oil in a medium-sized pot over medium heat. Sauté the garlic and ginger until fragrant.
3. Add the broth: Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 5 minutes.
4. Throw in the veggies: Add the rehydrated shiitake mushrooms, mixed mushrooms, bamboo shoots, and corn to the pot. Cook for 5 minutes, or until the mushrooms are tender.
