What is Mushroom Khichdi?
Imagine a warm, comforting bowl of rice and lentils, packed with the earthy flavor of mushrooms. That’s mushroom khichdi for you! It’s a vegetarian dish that’s perfect for a cozy evening or a quick and healthy meal.
Ingredients You’ll Need:
1 cup rice (I like to use basmati)1/2 cup split yellow lentils (moong dal)1 cup mixed mushrooms (button, shiitake, cremini)1 large onion, chopped2-3 green chilies, slit (adjust to your spice preference)1 inch ginger, grated2 cloves garlic, minced1 teaspoon cumin seeds1/2 teaspoon turmeric powder1/2 teaspoon red chili powder1 teaspoon garam masalaSalt to tasteFresh coriander leaves, for garnish Let’s Cook!
1. Prep Your Grains: Rinse the rice and lentils thoroughly under cold water. Drain well.
2. Sauté the Aromatics: Heat some oil in a pressure cooker or a thick-bottomed pot. Add cumin seeds and let them splutter. Then, add the chopped onion, green chilies, ginger, and garlic. Sauté until the onions turn golden brown.
3. Add the Spices: Stir in turmeric, red chili powder, and garam masala. Cook for a few seconds until fragrant.
4. Combine the Ingredients: Add the rinsed rice, lentils, and mushrooms to the pot. Mix well.
5. Cook it Up: Pour in about 5 cups of water. Adjust the water quantity based on your desired consistency. Bring to a boil, then reduce heat to low, cover, and cook until the rice and lentils are soft.
6. Taste and Adjust: Check for salt and adjust accordingly. You can also add a squeeze of lemon juice for a tangy kick.
7. Garnish and Serve: Sprinkle with fresh coriander leaves. Serve hot with a dollop of yogurt, if desired.
Tips for the Perfect Mushroom Khichdi:
For a richer flavor, roast the mushrooms before adding them to the khichdi.
You can add other vegetables like carrots, peas, or spinach to make it more nutritious. If you don’t have a pressure cooker, you can cook the khichdi in a regular pot on low heat for about 30-40 minutes. For a creamier texture, you can blend a portion of the cooked khichdi and stir it back in.And there you have it! A simple, delicious, and wholesome mushroom khichdi. Enjoy this comforting meal any time of the day.
