Ingredients 1 large onion, chopped

1. Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Stir in the garlic and ginger, cook for another minute until fragrant.
Building the Flavor
1. Add the sliced mushrooms to the pot and cook until browned, about 10 minutes.
2. Sprinkle in the smoked paprika, cumin, and cayenne pepper. Cook for 30 seconds, stirring constantly.
