1. Clean and slice your shiitake mushrooms into long strips.
2. Grill or pan-fry the mushrooms until they’re tender and slightly crispy.

Make Sushi Rice
1. Cook your sushi rice according to package instructions.
2. Once cooked, let it cool slightly.
3. In a separate bowl, mix rice vinegar, sugar, and salt.

Assemble Your Sushi Rolls
1. Lay a nori sheet on a bamboo sushi rolling mat with the shiny side down.

5. Use the sushi mat to roll up the sushi tightly.
6. Moisten the edge of the nori with a little water to seal.
7. Slice the sushi roll into bite-sized pieces.
