Mushroom Okonomiyaki: A Savory Japanese Pancake
What is Okonomiyaki?Okonomiyaki is a popular Japanese dish that translates to “cook as you like.” It’s basically a savory pancake made with a batter of flour, water, eggs, and cabbage, and then filled with your choice of ingredients. Today, we’re going to make a mushroom-packed version.
Ingredients: 1 cup all-purpose flour
1 cup water2 eggs1/2 head of cabbage, shredded1 pound mixed mushrooms, sliced1/4 cup green onions, chopped1 teaspoon grated gingerSalt and pepper to tasteVegetable oil for cookingOkonomiyaki sauce (store-bought or Homemade)MayonnaiseBonito flakes (optional)Instructions:Mix the Batter
In a large bowl, whisk together the flour, water, and eggs until smooth.
Stir in the shredded cabbage, sliced mushrooms, green onions, and ginger.Season with salt and pepper to taste.Cook the Okonomiyaki
Heat a large skillet or griddle over medium heat.
Add a thin layer of vegetable oil to the pan.Pour about 1/2 cup of batter onto the hot pan and spread it into a circle.Cook for about 5 minutes, or until the bottom is golden brown.Carefully flip the okonomiyaki and cook for another 5 minutes, or until cooked through.Repeat with the remaining batter.Top and Serve
Drizzle okonomiyaki sauce and mayonnaise over the cooked pancakes.
Sprinkle with bonito flakes, if desired.Serve immediately.Tips: For a thicker pancake, use less water in the batter.
You can add other ingredients to your okonomiyaki, such as bacon, shrimp, or cheese.Okonomiyaki is best served with a side of pickled ginger or Japanese mayonnaise.Enjoy your homemade mushroom okonomiyaki!
