Ingredients: 2 cups mixed mushrooms (button, shiitake, oyster)
1 cup sambar powder1/2 cup toor dal (split pigeon pea)1 large onion, chopped2 green chilies, slit1 inch ginger, grated4 cloves garlic, minced1 tomato, chopped1 teaspoon turmeric powder1 tablespoon coriander powder1 sprig curry leavesA pinch of asafoetida (hing)Salt to tasteCoconut oil for temperingInstructions1. Prep the Dal:
Rinse the toor dal thoroughly and soak it in water for about 30 minutes.Drain the dal and pressure cook it with 4 cups of water for about 3 whistles. Let the pressure release naturally.2. Sauté the Aromatics:
Heat coconut oil in a pressure cooker.Add the asafoetida and curry leaves, letting them splutter.Sauté the chopped onion until golden brown.Add the ginger, garlic, and green chilies, sautéing for another minute.Stir in the turmeric and coriander powders, cooking for a few seconds.3. Cook the Mushrooms:
Add the chopped mushrooms to the pressure cooker and cook until they release their water.Cover and cook for about 5 minutes, or until the mushrooms are tender.4. Blend the Sambar:
Add the cooked dal, sambar powder, tomato, and salt to a blender.Blend until you have a smooth paste.5. Combine and Simmer:
Pour the blended sambar into the pressure cooker with the sautéed vegetables and mushrooms.Stir well to combine.Cover and cook for another 2-3 whistles.Let the pressure release naturally.6. Serve:
Garnish with fresh coriander leaves.Serve hot with rice or bread.Tips: For a richer flavor, you can add a coconut milk-based tempering to the sambar.
