Who says satay is just for meat lovers? This plant-based version is packed with flavor and super satisfying. It’s perfect for a weeknight dinner or a casual gathering. Ingredients:
For the mushrooms:
Oyster mushrooms (or your favorite kind)Soy sauceSweet soy sauce (or kecap manis)Ground corianderToasted sesame oilFor the peanut sauce:Creamy peanut butterCoconut milkChili (fresh or dried)Lime juiceGinger Instructions:
Get your skewers ready:1. Soak wooden skewers in warm water for about 30 minutes. This prevents them from burning.
Prep the mushrooms:1. Tear the oyster mushrooms into even strips.
2. Thread the mushroom strips onto the skewers.
Make the satay marinade:1. In a bowl, combine soy sauce, sweet soy sauce, ground coriander, and toasted sesame oil.
2. Brush the marinade generously over the mushroom skewers.
